Welcome to the reflections on
May 2009 Tonga Tales

Post Indaba Tales

Life is not about waiting for the storms to pass – it is about learning
to dance in the rain!

Indaba reconfirmed everyone’s thoughts on the dreaded economic situation. Thankfully everyone is in on this one together and we are all using the opportunity to polish our raindancing moves!

Service is our most important product and the recent floods have proven once again that our standards can be maintained come well... high water!

While all Tongabezi Lodge rooms are once again fully available we have received the following lovely comment from one of our guests who stayed at the very peak of the flood:

Thanks for your concern and help during our stay at Tonga/River Club. Everything worked out great under the circumstances. I’m sad only for the damage to your beautiful Lodge. I hope the flood has receded so the work can begin to restore the cottages to their original beauty. We actually canoed right through the Dog House and around the bed.

It wasn’t like we missed experiencing the Tonga hospitality at all as all our activities were still arranged and conducted from there. Everyone was very accommodating and the gate left open between the properties for our convenience. The Lunar Rainbow was just amazing on our last night.

Again thanks for all your help arranging and making our stay so memorable,

Kristina Trowbridge

The Tongabezi garden continues to flourish and we are now providing our homegrown vegetables with homemade organic fertilizer. Join our table at Tongabezi where we spice things up a little to warm you up during winter:

Sweet Corn and Chilli Bhajis

450g sweet corn
2 tablespoons vegetable oil
2 teaspoons garam masala
2 teaspoons cumin seeds
1 small onion diced
3 nuggets freshly grated ginger
1 chopped fresh chilli
250g flour
10g baking powder
1 teaspoon turmeric
125ml water
2 whole eggs
Salt and pepper to taste

In a mixing bowl, add all of the above ingredients and mix well. Keep in an air tight container refrigerated for up to a week.

Sambal

1 diced onion
2 diced tomatoes
1 tablespoon fresh chopped parsley
1 tablespoon lemon juice

In a mixing bowl, add diced onion and tomatoes, then lemon juice and parsley. Toss well and put in between the Bhajis stack.

Our Comment Corner

DSTV is currently lauding William Shakespeare’s phenomenal vocabulary (approaching 30 000 while normal earthly beings boast around 5 000!) Our personal preference for British writing this month however comes from Mr and Mrs Clymont who was booked in one of our Houses by Giltage Travel

"We enjoyed waking up to the daily Hippo chorus and bird song each morning. The way each room opens you to life on the Zambezi is breathtaking and opens your eyes to the beauty of the sights and sounds of the mighty Zambezi".

New under the Tongabezi Umbrella... ella...ella!

The rainy season is now something of the past but we continue with a water theme this year.

• 2010 Rates are now official – make sure you have your copy!
• The treehouse now boasts an additional upstairs shower!
• Our pontoon has been upgraded and now also hosts a breakfast cruise
• All our properties – including Tangala and Livingstone Island have reopened    following the floods.
• The cottages all have a brand new sparkly coat of paint inside and out and all the    wooden finishes have been treated. We also have some brand new soft    furnishings and mosquitoe nets!
• The Sindabezi refurbishment continues in spite of the excitement of attempting a    complete rebuild in the middle of a flood, notwithstanding tons of timber being    delayed, delayed, delayed and then delivered incorrectly... TWICE!
