Everyone knows that conservation depends entirely on teamwork. The Tongabezi team certainly walks their talk as far as caring for the environment goes. From using sustainable forests to build the new Sindabezi Island, to caring for Victoria Falls by ensuring refuse removal and the management of Livingstone Island we are always looking for more ways to take ever better care of the world we live in.

Conservation is a challenge that is met every day at Tongabezi Lodge, Sindabezi Island and Livingstone Island.

Warning: Rantings of an addict follow!


This month's foodie sound bite does not come from a guest... not because the pickings were slim (see guest comments) but because the author of this sentence considers herself the TOP Tongabezi Morning Chip Cookie FAN! In fact I think there is a fourth ingredient called HEAVEN involved here! Chef Ken might be able to restrain himself and use a medium cookie cutter generally - but I am lucky enough to have experienced the GIANT version with CHOCOLATE bits added... just a couple of times.

Home Made Tongabezi Morning chip cookies

Ingredients
600g plain flour
400g butter
200g castor sugar

In a Kenwood (A Tongabezi endorsement!) machine add butter and sugar beat until it becomes creamy then add flour mixing on low speed until the dough is smooth.
On a floured surface bring the mixture together and let it chill for 15 to 20 minutes in the fridge before rolling and cutting your biscuits.

Tips
It is up to you to use small, medium or a large round cutter. Me I prefer a medium remember baking is science and cooking is an art hope you are going to enjoy baking with Chef Ken.

Conservation by numbers


Ever wonder exactly what Tongabezi does to improve our environmental footprint?

  1. We have invested in a large, state of the art water recycling plant at Tongabezi.
  2. Sindabezi has a solar powered water recycling plant.
  3. Sindabezi uses only renewable energy (aside from gas cookers) including recycled wood chips for fuel and solar power
  4. Our boat engines are specially chosen to ensure minimum environmental impact and noise
  5. We use local labour and local artisans for the bulk of our building and repairs.
  6. We believe in training our in house builders and artisans by bringing in specialists in their fields to teach ever better techniques.
  7. We have a fabulous vegetable garden with high tech irrigation (water saving) and fed by our own organic compost.
  8. Our staff is transported to and from work in one vehicle.
  9. Sindabezi is built mostly from wood harvested from sustainable forests.
  10. The Tongabezi team has only 3 staff members that are not employed from the local community - with constant environmental awareness training we believe that the message goes beyond our property borders and into the local community too.
  11. One of the Tongabezi Trust School teachers is currently completing a sponsored degree in environmental studies - ensuring that the curriculum at our School will offer the chance for all students to participate in preserving the earth.
  12. We manage and maintain Livingstone Island - a Natural Heritage site.
  13. We take responsibility for overseeing the refuse removal from Victoria Falls.


About the Tongabezi Vehicles


It goes without saying that Tongabezi operates according to the laws of Zambia and that we comply with all the standards set by the Road and Transport safety Agency (RATSA).

There are however a couple of additional points worth noting:

  1. Our vehicles are no more than 5 years old
  2. They are serviced by reputable garages and only genuine parts are used when serviced.
  3. Our drivers do not drive outside the Livingstone area and do not cover more than 200kms a day.
  4. We were the first company to ban transfer of passengers on the back seat of our open safari vehicles.

Our Policy is when open safari vehicles are on the tarred road, passengers must be seated inside the vehicle where seat belts are available and they are protected from any flying objects / wind etc. Passengers can only sit at the back when inside the National Park on a game drive.

LUNAR RAINBOWS IN FEBRUARY


New Years eve 2010 was a huge success. All our guests had a chance to view the blue moon at Victoria Falls during pre dinner drinks. The Tongabezi guests had the entire Falls all to themselves on this magical evening and everyone took full advantage of this unique opportunity.

Dinner was served late at around 21:00 hours as everyone wanted to linger as long as possible at the Falls. A feast was served and the Maramba Cultural dance Troupe entertained all our guests - by midnight all the guests were dancing to the drums and counting down the seconds to the new year. The party finally ended at around 02:00 on the first day of 2010!!!

The next lunar rainbow viewing will be on the 27th and
28th of February and 1st of March 2010.
